Welcome back to another Dish Stack!
This week has been a little nuts with a series of storms that knocked out most of the power in our city. Welcome to the Natural World! Mama Earth ain’t playin.
This recipe is delicious AND paramount to your health, wealth and healing. As the Purple Peach, it is my duty to knock out another intentional recipe for anyone that wishes to try this ancient practice of cooking and consumption.
Now, I am fully aware that not everyone digs coconut.
I love it, but I’ve had to grow into it. Also, I’m a certified weirdo from the future and know its potential.

For those who aren’t coconut fans, there are optional instructions at the bottom of the recipe. Either way, this dish can be enjoyed with the same intentional healing properties.
The goal with this intentional recipe is to strengthen your energetic shield and emerge from the ‘old’ subconscious behavioral patterns. It is also helpful to protect your peace from certain people, places and circumstances you may find yourself being unsettled by. I spoke about this gray energy in The Gray.
Most human beings around you are carrying this static electricity without their knowledge. It takes intentional work to clear out of this energetic space for true harmony within your inner and outer world. This recipe has been curated to help with that!
Story Time!
The first time I had coconut, I thought it was disgusting.
I think I was in middle school, 11 maybe 12, when I had my first piece of coconut straight from the shell. Before this point I truly thought they were just bras for mermaids. The tough texture and mild flavor reminded me of chewing on sweet shoelaces at that time.
As I grew older and began having more and more dishes and desserts made from and with coconut, I started to understand how versatile this beautiful tree nut is. Some things must grow on you over time and when they lock in, it’s a game changer.
The organic energetic of coconuts are so potent that the oils, water, milk and husks are all major players in the homeopathic healing space. Breaking open the coconut represents the breaking open of the ego, pride and arrogance.
Integrating this recipe with your homeopathic healing practices can make for a truly solidified energetic shield for a fully flavorful dish that solidifies your protective bubble.

Main Ingredients Energetics + Vitamins + Minerals

Grocery List
Shrimp -1lb– 21/25
1 Eggplant
Cherry Tomatoes
Parmesan Cheese- shredded
1 Shallot
1 Red Onion
Sea Salt
Black Pepper
Tony’s Creole Seasoning- (one of my favorites because I’m lazy these days. For a fresh creole mixture click here)
Crushed Red Pepper
Measurements
Shrimp 21/25- 1 LB – peeled, shelled and deveined
1 Eggplant – whole – cut vertically in 1/2” slices
4 tsp Cajun Seasoning- Divided
2T Shallot – minced
2T Fresh Garlic- minced
¼ C Red (purple) Onion – minced
3T Butter/Vegan Butter- olive oil will not work
3T Flour
1C Coconut Milk (for heavier sauce use Coconut Whipping Cream)
1C Chicken/Vegetable Broth
4-5 Cherry Tomatoes- halved
2T Parmesan Cheese- shredded
Mozzarella Cheese- shredded (for topping)
Time To Make Dinner!
Preparation Command
Take a deep breath and ground yourself. The world is in a hurry, but you are not.
Connect with your Peach Power with 5 deep breaths while tapping your stomach, right above your belly button with the first two fingers on your right hand. Speak your command with sovereign authority. No energy on this Earth can override your true sovereign authority.

Out loud in a full voice is the best and most powerful way to set your intentions.
“I command the removal of all external energies off of my ingredients from corporate entities, farming, transportation, personnel and storage. I am a sovereign and natural human. I own my power. I own my health. I own my wealth.”
Now, check in with your body and your surroundings.
How do you feel? Is there a resistance? Is there a phone ringing, car honking or child crying? The first time you make this command you may feel a pressure, distraction or resistance. It’s just the old intentional energetics trying to intimidate you in your new power. Know that you hold the power to override this feeling.
Repeat command as needed.
Cajun Coconut Shrimp Shells with Grilled Eggplant
Intention: “I set my intention for protection, release of physical pain in my muscles and let go of what I am subconsciously holding onto. I am reign over my temple.”
Mince fresh onions, garlic and shallots. Set aside.
Intention: “I set my intention to break through any patterns within my ego mind that do not serve my forward movement. I am fertile with new beginnings and I ignite them now.”
Measure out 1 C coconut milk and 1 C chicken/vegetable stock. Water remembers.
Intention: “I set my intention for confidence and courage to make the necessary changes to rise from the shadows into my own brand of bravery. I am strong and rebellious against what I fear.”
Season your shrimp with 1-2 T creole seasoning. Adjust amount as needed.
Intention: “I set my intention for emergence into my purest state. I am the leader of my life.”
Measure out 3 T of Butter/Vegan Butter and 3 T Flour/GF Flour. Set aside.
Intention: “I set my intention for identity alignment with my highest and best self. My hair, skin and nails strengthen with this meal.”
Grab 4-5 cherry tomatoes and slice in half. Set aside. (not pictured. oops.)
Intention: “I set my intention to expand my conscious awareness for stability and balance of my mind. I am the ruler of my thoughts.”
Slice eggplant vertically in 1/2” slices. We want them as a meaty side dish. Season with salt, pepper and crushed red pepper.
Heat skillet on Medium. Add in 1 T butter/vegan butter, 1-2 tsp of Cajun Seasoning. Sauté aromatics (onions garlic and shallots) until slightly transparent.
Add in 3 T butter and 3 T flour. Always equal parts for a roux. Whisk and cook until brown stage.
Heat grill pan on Medium-High heat. Lightly coat with butter/vegan butter or 1T olive oil to avoid sticking.
Add eggplant to grill pan. Grill 2-3 minutes per side.
Flip eggplant over. Grill until desired doneness. Set aside.
Slowly temper coconut milk into the brown roux and whisk until combined.
Give it 30-60 seconds to settle bring back to boil.
Add in chicken stock and whisk.
Lower heat to medium-low and let coconut sauce simmer and thicken.
Remove eggplant from grill pan. set aside and cover to keep warm.
Bring water to a boil in Medium pot and add in pasta. Cook until al dente.
Place shrimp on grill. 1-2 minutes per side.
Add shrimp to coconut sauce, add in cherry tomatoes, parsley and 1/2 C Parmesan cheese.
Let Cajun Coconut Shrimp Sauce simmer on medium low.
Drain cooked shells and rinse with hot water to remove starch.
Add in 3 C of cooked shells to coconut shrimp sauce.
Plate 2 slices of eggplant with a serving 3 ladles of Coconut Shrimp Shell Pasta with grilled eggplant.
Top with shredded Mozzarella and enjoy!
Enjoy your Cajun Coconut Shrimp Shells with Grilled Eggplant
Option #1 (I don’t like coconut) - substitute Coconut Milk with Heavy Cream, Milk, Soy Milk or a high fat percentage milk.
Option #2 - Substitute shells for spaghetti, linguine penne or your favorite pasta.
Feel free to adjust this recipe in anyway that suits your dietary needs.
