A little storytime before we dig into this powerful dish for your mental + emotional reset.
Growing up in the East Bay Area of San Francisco, I was surrounded by diversity in culture and cuisine. There was every kind of cuisine you could imagine just right around the corner. Truly a culinary blessing. The Mexican food was top notch, better than what I’ve had in L.A., better than the Tex-Mex here in Texas.
I said what I said, fight me.
Asian culture and cuisine had always held a piece of my heart. The light, fresh ingredients and specific cooking techniques sparked my curiosity from the age of 8. I loved it! I wanted to know everything about their flavors. I even ate some of the dried shrimp, fish, cricket, and ant snacks that were abundant in the homes I used to frequent. I’ve always been a pretty adventurous eater. Bug protein is for real.
Some of my friends from school would invite me to stay for dinner on days we would hang out. One of my best friends in middle school was a first generation American, her father was from Vietnam and had a constant rice cooker going in their kitchen.
Oh man, I had some interesting dinners with them, especially since her father was an OG Mafia type (pretty sure he ran an underground gambling ring) and her brother was into the gang life, regardless they were a lovely family, they treated me like their own. I became enthralled with their cultural flavors, ways of preparation and dining together.
Everything, and I do mean EVERYTHING, was fresh.
I arrived one Saturday afternoon to witness her father de-feathering a recently decapitated chicken on the kitchen table for our meal, I was 11—it was awesome. We had homemade Pho monthly, if not weekly… sidenote: this was at least a 15 years before Pho became gentrified like everything else in this overly commercialized plastic ‘country’. God I love Pho. It’s pronounced ‘Fuh’ by the way.
Anywho, the other day I was feeling nostalgic and wanted an easy—light yet hearty — meal to feed myself and my partner as we moved into the weekend. I had just purchased the most beautiful Bok Choy bunch and shiitake mushrooms from my local market and wanted a way to show case it’s nutrients and energetic power. I chose to pair these ingredients with our go-to chicken and shrimp concoction to balance the head, heart and body. Elemental air + water + earth.

Main Ingredient: Energetics + Vitamins + Nutrients

Stir Fry Sauce - I like the '3 Dragons’ brand or you can make your own
(optional) Hoisin Sauce - I like the ‘Lee Kum Kee’ brand but Kikkoman works great too
