Who doesn’t love a good taco?!
If you don’t, then this week’s Dish Stack probably isn’t for you.
For those of you who do, read on.
It was lunchtime, on a Tuesday, and I was feeling a little uneasy about a certain musical endeavor I have recently joined (I am a musician as well as an Intentional Chef) and needed a quick and easy pick me up to get my ass in gear; mentally and physically. So, I scoured the fridge and pantry and found the perfect ingredients to cook up some quick veggie tacos.
The whole idea of tacos is so simple and yet holds a plethora of possibilities for the most wild and outlandish ingredients this world can offer. I’ve had all kinds, shrimp, fish, shark, octopus, venison, pork, lamb, beef, veal, oyster, beef tongue, alligator, tortoise, fried avocado…but I realized I had never made myself a delicious vegetarian taco. Upon further review of my life choices…that seemed weird. I love vegetables! So, I decided to give it a go on this very foggy Tuesday with the intention to align them with my new passion project.

Let’s make some Spicy Veggie Tacos!
Main Ingredients: Energetics + Vitamins + Nutrients
Eggplant - grounds in new ideas for production, consciousness, wisdom, focus, heart health, reduces inflammation, fiber, potassium, Vitamin C, Vitamin B6

Roasted Red Pepper Hummus - ignites passion centers, supports creativity, helps balances shifts in identity, vitamin C, vitamin A, packed with fiber and protein - I used store bought, it was lunchtime and I was busy.
Organic Brown Rice - protects against negative forces, supports inner-peace, balances emotions, lowers blood pressure, lowers cholesterol, supports good gut bacteria, packed with fiber
Avocado - seed of heart intelligence- supports loving self expression, aphrodisiac, opens love channel in partnerships, heart healthy fat, vitamin C, vitamin E, vitamin K, and vitamin B6, riboflavin, niacin, folate, pantothenic acid, magnesium, potassium
Your choice of tortillas:
Corn Tortillas - supports wealth of harvest (corn) for the gardener/gatherer/farmer, abundance, prosperity, combines ‘marriage’ of ingredients, supports “life-path”, fiber, complex carbohydrates, calcium, iron, B vitamins
OR
Flour Tortillas - supports wealth of harvest (wheat) for the gardener/gatherer/farmer, abundance, skeletal healing, good source of carbohydrates, calcium, protein
other tortilla options - spinach tortillas, keto friendly tortillas, fresh made masa/sopes, red pepper tortillas, etc. Do it up!
Seasonings for Veggies
Sea Salt + Black Pepper - supports the barrier between you and the intentions set by industrial farming, corporations, natural energetic protection,
Garlic Powder - supports energetic protection, lowers blood glucose levels, supports liver function
Paprika - ignites sexual life-force energy, passion, goal orientation, antioxidant, helps reduces risk for cancer/heart disease, helps alleviate gas
Chili Powder - increases fertility and creative power, restores sexual passion, lowers cholesterol, improves blood circulation, helps alleviate physical pain
Cayenne Pepper - supports strong blood flow, promotes healthy heart function, relationship-healing, faithfulness
The secret to a good life—live everyday like it’s Taco Tuesday.
Preparation
Pre-heat oven to 325°F - this is to heat up your tortillas.
In medium pot start boiling water for your brown rice. Set your intention on your pot of water using the energetic descriptions given above. Water remembers. Add a drizzle of olive oil/butter and a sprinkle of salt. *soaking your organic brown rice overnight will provide stronger intentional accuracy for gut health.*
Bring water to a rolling boil, add in your organic brown rice. Turn to low and cover. Let cook on low for 30-45 minutes. You can do this the day before or use a rice cooker ahead of time so you have your cooked rice on hand.
Grab a stack of your favorite tortillas and set your intention on them per the above guidance. Wrap in aluminum foil. Make a pocket by folding the edges to seal shut, then place in oven.
Set your intention on your vegetables. It is extra powerful to do this while washing them. Water is a conduit for your Peach Power electric charge, plus it is intelligent and remembers everything you say. Make your intentional commands to break all connections between the industrialized farming practices and corporate grocery chains from your beautiful vegetables. This practice dominates anything that would be considered inorganic, molecularly or otherwise. *If you grow your own vegetables make sure you set your intention to negate any energetic interference from wild life-it’s a thing*
Dice your Eggplant and Zucchini in bite sized pieces. Set your intention on them via the energetic descriptions given above and tell them what they will do for you in your beautiful body. Again, water remembers…vegetables contain water, your body is made up of mostly water…still with me?
Slice your red onion to desired thickness. I like them thick so they can cook at the same rate as the other veggies, but you do you! Set your intention on your red onions and add them to your Eggplant and Zucchini bowl.
Season your veggies with a mix of the spices listed above. Set your intention on them while coating your vegetables. Let the spices mingle with the veggies in a bowl for 2-3 minutes.
Grab your favorite skillet and heat on medium heat. Season the pan with a drizzle of olive oil or butter, whichever you prefer. With certain spicy recipes I like to season my pan with a smidgen of lard (it’s an ancient healer for wounds and skin among other ailments), it also enhances flavor. Set your intention on whatever fat you use.
Add your veggie cocktail to pan and sauté 5-7 minutes (or until soft throughout). Mentally support the set intentions by repeating to yourself (or out loud…out loud is most powerful) how these ingredients are going to shift your energy, health and the health of your diners.
Cut your avocado in half and - yep, you guessed it- set your intention on that bright green deliciousness! Remove pit, slice vertically in 1/4” sections and remove with spoon. set aside.
Get your station ready with the accoutrements for your tacos. I used ‘Texas Texas’ salsa, roasted red pepper hummus and fresh avocado.
Remove your tortilla packet from the oven, they should be hot and steamy!
Place 2-3 tortillas on each plate for serving and layer with your accoutrements. Our layers were hummus, brown rice, veggies, salsa and avocado. Make sure you set your intention on that hummus as you spread it on the tortillas!
Enjoy your Quick + Spicy Veggie Tacos with Hummus and Organic Brown Rice
Option #1 - Reduce Heat- Tone down the spice with some sour cream, yogurt or aioli when serving to children or the spice intolerant.
Option #2 - Make it Meaty - top with your favorite left over chili or thick, meaty stew.
This lunchtime delight not only filled me up, but got me excited and passionate about the new musical venture I had agreed to participate in. I tend to get droopy on gross gray days, like some of us creatives, and this dish really helped light a fire under my ass to go after my goals and believe a little deeper in what I’m here, on Earth, to do!
